Cajun Chicken Pasta

This delicious recipe for Cajun Chicken Pasta it is perfect for a quick dinner and also as a pasta salad for lunch the next day.

This creamy cajun chicken pasta recipe was one of those recipes where I started trying to make something else and it just evolved.

Cajun Chicken Pasta

I was originally making Chicken Alfredo pasta. However, when I did it, it didn't taste like anything. It was kind of boring so I added a couple of tablespoons of Cajun spice mix and then it did taste a lot better.

So the next time I did I decided to add some veggies. Anyone who reads my recipes regularly will know that I like to add vegetables, as many as I can, to dinner plates. Since I was using cajun seasoning I decided to take inspiration from the veggies in the chicken fajitas, so I used peppers and onions.

And a new dish was born: pasta with Cajun chicken. It is very quick to do, it will be ready in just 20 minutes.

Although I don't have to worry too much about making recipes that might be in a hurry, I like to minimize the amount of time I actually have to spend in the kitchen so I can spend time on other things.

However, I always find it helpful to have a few recipes that can be ready quickly. This pasta dish takes just 20 minutes to cook, making it perfect for a mid-week meal when time is short. For these occasions I have a list of quick dinners that I try to enlarge to have a variety of options.
