In a previous article I shared the recipe for the sauce teriyaki and since then I had not made a single dish in which it was used and I finally decided to make one with chicken and some vegetables, so in addition to being healthy it would impart some color to it.

Teriyaki sauce has a fairly high dose of salt so I add very little to the ingredients. If you don't want to make the sauce at home, you can use the one sold in supermarkets.

Ingredients for the Chicken with Teriyaki sauce

  • 2 chicken breasts (approximately 300g)
  • 1 large broccoli (about 500g)
  • 120 g frozen peas
  • 4 chives
  • 300 g of brown rice
  • 4 tablespoons Teriyaki sauce
  • 4 tablespoons olive oil

Preparation

  1. Put to make the rice.
  2. If you are going to make your own Teriyaki sauce, then this is the time.
  3. While the rice is cooking, chop the broccoli into small florets.
  4. Cut the chives into thin slices.
  5. Cut the chicken breast into strips.
  6. Heat the oil in a large saucepan or wok.
  7. Once the oil is hot, add the chicken, broccoli, scallions, and frozen peas.
  8. Mix the ingredients in the oil and fry for 5-6 minutes, stirring sporadically until the chicken is well cooked. It is important to stir the ingredients to avoid burning, but you should not constantly stir them to allow their surfaces to cool slightly and thus add a delicious extra flavor to the dish.
  9. Remove the wok with the chicken, peas, and broccoli from the heat.
  10. Drain the rice and add it to the wok.
  11. Add the teriyaki sauce.
  12. Mix all the ingredients until all are covered with the sauce. You can also serve it individually by placing the rice in a bowl, cover it with the chicken and vegetable mixture and to finish, you drizzle the Teriyaki sauce on top. Maybe this way it seems a little more elegant, more in the style of a Chinese restaurant.
  13. Serve hot.
  14. If you want to add a different presentation, you can sprinkle some sesame seeds and a little chives, cut very small.
