This recipe for banana muffins it is easy to make and they are delicious. They are ideal for breakfast or a snack.

  • 5 ripe bananas, to be used separately
  • 1 cup of brown sugar
  • ½ cup vegetable oil
  • 1 large egg
  • 1 cup all-purpose wheat flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup sour cream
  • 1 tablespoon vanilla extract

How to make banana muffins

  1. Preheat the oven to 180ºC.
  2. Line a muffin tin with the paper cones.
  3. Peel 4 bananas and place in the bowl of a mixer equipped with the paddle attachment.
  4. Beat until pureed, about 1 minute. You can also do it by hand by mashing them with a masher or a fork.
  5. Add the brown sugar, oil, and egg.
  6. Beat until smooth.
  7. Reduce speed to low.
  8. Add the flours, baking powder, baking soda, and salt.
  9. Beat until all ingredients are combined and a smooth batter is left.
  10. Add sour cream and vanilla.
  11. Beat until combined.
  12. Fill cupcake liners only three-quarters full.
  13. Cut the remaining banana into thin slices, about ½ cm.
  14. Place a banana slice on the top of each cupcake.
  15. Bake for 25 minutes, until toothpick inserted in center comes out clean.
  16. Transfer to a wire rack to cool.
  17. Serve.

What can I substitute for sour cream?

It works very well for me to replace it with natural Greek yogurt.

Can I substitute brown sugar for white?
